Baked eggs with chorizo, cannellini beans
Recipe:
Ingredients for 4 pers.
a few tbsp of oil
1 red onion chopped
2 small cloves of garlic
200 g of chorizo or other kind of spicy sausage
1 little red chili chopped
400 g of cannellini beans
200 g of cocktail tomatoes, cut into halves
4 eggs
salt pepper and paprika
fresh or dryed flat-leaf parsley
Preheat your oven to 200 degrees.
Fry onion, garlic and chili in a little oil in a pan.
Then add chorizo, the beans and paprika, fry for 1 min.
Add tomatoes and fry for further 1-2 min.
Taste with salt and pepper.
Pull it all in a oven using a tray or use a oven proof frying pan where you can take the handle off.
Turn the six eggs out over the your bean and chorizo mix one at the time and place them nicely.
Bake in the oven for 7-10 min (until the eggs are finished), sprinkle with parsley. I served it with home baked gluten-free bread, cold and fresh homemade fig-smoothie and with a nice warm latte of course.
