Cheasy Words of Wisdom on a Monday

I am an avid fan of Sex and the City and I can never have enough of Sex and the City quotes. Carrie Bradshaw SATC is known from giving some of the best best words of wisdom quotes regarding love and life; and here below you can read  my two favorites…

“Maybe mistakes are what make our fate… without them what would shape our lives? Maybe if we had never veered off course we wouldn’t fall in love, have babies, or be who we are. But it’s comforting to know that the ones you love are always in your heart… and if you’re very lucky, a plane ride away”

“Sometimes we need to stop analyzing the past, stop planning the future, stop figuring out precisely how we feel, stop deciding exactly what we want, and just see what happens.”

While I was reading the quotes above, I came to think about how come Carrie seems to get it always spot on, and in so many ways (even though SATC is some years old)? and if it’s not in the words of wisdom then it’s style and fashion, I´m in love with Carries opulent pearl necklaces, that she wears in the picture above!

I (and many others I think) feel that I can relate to these little quotes with words of wisdom. Quotes about living in the moment and about having the courage to feel, to follow your dream and to seek and follow the big love. How not to be afraid, and how not to be limited by national land-borders, and not to look back, but instead to look forward, and then it´s also about how important it is to live your life!

I remember that I was scared when I decided to move to Barcelona to live together with my Mr. Big, J. I felt that I had to leave every thing that I knew and loved behind me in Denmark, but I also knew that I couldn´t live my life with out him, and if worse came to worse I could just pack my stuff and go back home to Denmark again. But luckily that was unnecessary, because I have not regretted my choice about moving, not even once!

Of course I miss my family and friends back home a lot, but I have them constantly in my heart, so they are always with me, no matter where I am.

If I had not moved to Barcelona, then I would probably have worked my ass off at Copenhagen Rigs Hospital, constantly swearing and cursing about where I could find my prince on the white horse. Knowing that I missed out, big time, of my chance to create a beautiful future together with J. And I would definitely have regretted 110%, that I was too afraid to take the chance, the chance of moving beyond countries and borders, to live with my amazing cute and handsome prince on the white horse, J.

I can not even think the thought about what if…..?? Thank God I did it.

Here’s to you – take a chance and live the life while you can!

J and I are off for a little picnic to Montjuïc now, – Barcelona’s Montjuïc is a broad shallow hill / mountain, with a relatively flat top overlooking the harbour, to the southwest of the city centre, and it´s so pretty!!

Good morning sunny day!

So tomorrow it’s the 14 of February it’s a day where we can celebrate love for eachother (optional of course…).

What are your plans for Valentines day and do you know who is your going to be your sweetheart on this a little-publicized day?

J is going to be my valentine sweetheart and l decided that we are going out for a romantic dinner at Restaurante Reñé Barcelona, where they serve Creative Fusion Catalan/ International dishes and of course good wine and cocktails. Yummmm I can’t wait !
I love romantic dinners and I’ve all ready planned what dress and which heels to wear – Perfect 🙂

I don’t know if it’s just me, but I combine love and valentine with sweet treats and I think that I want to make these little Gluten Free Healthy No Bake Brownie Bites very soon, I need to satisfy my cravings for sweets.

*Recipe – Gluten Free Healthy No Bake Brownie Bites
Prep time:  5 mins
Total time:  5 mins
This recipe is free from: gluten, dairy/casein, soy, peanuts, tree nuts, corn, eggs.

Ingredients
  • 1 cup Medjool dates, pits removed (about 1 cup)
  • ½ cup sunflower seed meal (from toasted sunflower seeds)
  • 4 Tablespoons unsweetened cocoa powder
  • 2 Tablespoons coconut oil
  • 1 Tablespoon honey (or other liquid sugar like pure maple syrup or agave nectar)
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Additional sunflower seed meal, nuts, shredded coconut, gluten-free cookie crumbs, etc. – optional but all possibilities for rolling brownie bites in, if desired.

Instructions

  • Line a cookie sheet with wax or parchment paper.
  • Add ingredients to bowl of food processor.
  • Pulse to begin blending, then turn processor to “On” position until mixture comes together in a solid ball of dough (see picture below recipe).
  • Remove ball of dough from processor and place on lined cookie sheet.
  • Divide dough into 24 portions and form small (1-inch) balls.
  • If desired, roll brownie bites in one of the additional ingredients suggested above.
  • Serve immediately or chill in refrigerator or freezer – they are excellent either way!
