Keep it green

Buenos dias.

Today is my last day at work before I start my mini summer holiday. My holiday consists of a small trip to Copenhagen followed by summer, sun and relaxation trip with J. to Tossa del mar 🙂

I just want to say good morning and I want to show you what J and I cooked this Sunday..
We cooked a green colored three course dinner at home.

We had cucumber prawn rolls as a starter, gluten free fish cakes with pea purée as a main dish and for dessert we had tons of good dark 80% chocolate 🙂

Pea purée:
300 grams of shelled peas
2 cloves of garlic
1 cm ginger
1 tablespoon oil
Blend until getting a really fine purée
Season with salt and pepper

Cucumber rolls:
Cut half a cucumber into thin slices and place them on a cutting board.
Fry the prawns in a little oil and sprinkle sesame on top.

Mix the prawns in natural cream cheese, with a little chopped red onion and coriander then season with herbal salt and pepper.

Add 2 teaspoons of the shrimp-cheese mixture on each cucumber slice and roll them together. Close with a toothpick.

Fish cakes:
Make the minced fish-meat by blending or mashing 2 white fish fillets and 150 grams of shrimp.

Mix the minced fish-meat with:
1 tassel coriander finely chopped
1 egg
1 red onion chopped
1 clove garlic chopped
1 small red chilli chopped (with seeds)
2 tablespoon corn flour

Create the meatballs with two tabelspoons, then turn them in corn flour mixed with sesame and fry them in a non stick fry pan.

Serve with wild rice, salad or new small potatoes with peel.

Gluten free zucchini and spinach lasanga

foto(10) foto(9)Last night we had a Gluten free zucchini and spinach lasanga. Mmm I could for sure eat that lasanga right now, but instead I will jump in the shower, dress up and join J for a romantic dinner in the city.

I did the lasanga like this.

Clean, chop and fry:
A little oil
2 cloves of garlic
1 red onion
300 grams of minced beef meat
2 fresh tomatoes
3 cups of mushrooms
4-6 cups of fresh spinach

Add herbal salt, paprika and pepper

Mix in the sauce sauce of:
0,5 can of canned tomatoes
1 cup of yoghurt natural

Do the lasanga layers with:
The meat sauce
1 thinly sliced ​​zucchini
Gluten Free lasange pasta

Continue the layers until the oven tray is full of delicious lasanga.

Create a look-a-like bechamel sauce:
1,5 cup of milk
1 cup of mozarrella cheese

Warm and melt it in a pot and pull it over the lasanga

Add the lasanga in a pre-heated oven for 30 min at 180 degrees 🙂

Where to get a good cafe latte in Barcelona -Farga!

doggy and cafe Some time ago J and I went to an old and ultra classic Café Farga in Diagonal. I had a cafe latte with french macarons and J had a lemonade and tapas. Café Farga is a beautiful classic, antique and elegant spanish cafe and restaurant. They also have a bakery and confectionery section.

It´s quiet, comfortable and warm atmosphere makes every visit a bit more exquisite than other cafés in Barcelona.

Dreaming of Autumn

Bcn autom romance This summer in Barcelona has not been as warm as it normally is. I´m afraid that I´m the one to blame. Because we Danes seem to take the Danish weather with us wherever we go, wups!

Although the temperature in Barcelona is still warm 28-30 degrees. Everyday you can see little clouds building up in the sky and the wind is now little fresh and autumn-ish.

These are the days I look forward too when the weather changes from summer to autumn.

I feel like wearing a warm and cosy jumper, a pair of shorts and boots, instead of sandals and summer dresses. I want to go out and enjoy a burning hot chai latte or one of Starbucks “special time of the year” coffees, yumm!

I also want to go for long romantic walk in Barcelona with my love J. and together watch the trees and the leaves beautifully transform from summer deep-green to their autumn robe in beautiful golden nuances, while we drink a cafe latte to go ♥

Come on autumn- jumper weather 🙂

And in case the raindrops decides to drip from the sky I would stay home and listen to the rain on my balcony, also light on some (or many) candles, drink warm tea, eat nuts and dried red/blue berries and read a good magazine.

In the upcoming autumn I am going to need some new nice, warm and cosy jumpers. When the weather changes to autumn then I should at least have four jumpers hanged in my closet. All I need is to take my computer, spend 10 minutes of my busy very important life, the money from my Visa card and then have a look at the jumpers online on Nelly.com

Alright wait a sec!….. If the autumn would be so kind and wait until at least me and J finish our summer holiday. I can´t wait for one week of total relax. We are going to Tossa del Mar in the first week of september and after that the fall is more than welcome to arrive 🙂

5:2 DIET GOOD OR BAD!?

Sometimes my friends ask me about dieting. I guess it’s because I’m a nurse and I work at Weight Watchers (hahaha), and maybe because I am a little bit of a health freak.

I love to cook healthy homemade gluten free food. But I also LOVE ice cream, danish salty liquorice, wine gums, marshmallows and dark chocolate.

I am not going on this particular diet, luckily for me I don´t need to lose weight. Anyhow this diet still caught my attention, therefore I post this 5:2 Diet.

indexFact: We all know what the best way to loose weight is: It is a reduced intake of calories and increase physical activity and never, ever skip meals. It´s just not always that easy!

The other day I saw a Danish tv show about this diet, they interviewed a young woman living happy and healthy on the 5:2 Diet and on the tv show they also interviewed a Doctor.

The Doctor had postivie things to say abut the diet. He compared the 5:2 Diet to s very old ancient lifestyle many years ago when people were hunters and often only ate every 3 days, or ate when there was food. At that time the people didn’t suffer from high blood pressure, diabetes and different kinds of cardiovascular disorders. Which can be caused by unhealthy eating habits.

The Doctor also pointed out that the diet is not injurious to your health but he also pointed out that he didn´t recommended that people lived life long after this diet. He said: The diet is good for shorter periods with a desire for a quick weight loss.

So if you want to lose a few kilos in a short time, say too lose a little weight before a wedding or any kind of big event or you need to loose a quick post baby weight then I think this 5:2 diet sounds all right 🙂

The 5:2 Diet, is a diet which involves severe calorie restriction for two days a week and normal eating the other five days. The diet is a form of intermittent fasting. The diet is claimed to promote weight loss and to have several beneficial effects on health. 

The diet specifies a low calorie consumption (sometimes described as “fasting“) for two days a week, which should not be consecutive, but allows totally normal eating for the other five days.

On this 5:2 Diet you’ll still get to eat all the foods you love but also get to enjoy health benefits. Such as positive effects on different kinds of cancer, heart disease, Alzheimer’s, and improvements in blood pressure, cholesterol level and also in insulin sensitivity.

These days some clever people says that intermittent fasting is revolutionising the weight loss world. Simply by eating significantly less for one or two days a week you can trigger incredible physical and mental changes that protect your body and brain from damage and help it repair itself.

It all sounds very good….
During my work at Weight Watchers I get to read a lot of interesting articles about health, dieting and food in generel. More recently I have come across many articles concerning fasting equals health. About how they recommend these days that you eat the most at breakfast, less at lunch and then even less for dinner so you are fasting between the three main meals.

Intermittent fasting offers a simple alternative that doesn’t involve calorie counting or starvation. And they say that this fasting/ 5:2 Diet can help you live a longer, healthier life without feeling like you sacrificing too much.

A typical fasting day may include a breakfast of 300 kcal, such as two scrambled eggs with ham, water, green tea, or black coffee, and a lunch or dinner of grilled fish or meat with vegetables, amounting to 300 kcal.

OBS. The daily 500 for woman or 600 for men kcal limit requires small portions.
