FOUR GOOD DAYS Part 2

CRABCAKES

CrabcakesCrab cakes with coriander (gluten-free)

My birthday is very near and my zodiac sign is Cancer. I guess that’s why earlier today I caught myself thinking “why not make delicious crab cakes for dinner“…. so I did. It was easy and they turned out very good and delightful fresh fish-ish- yumm!

To make the crab cakes I used 200 grams of crab meat, 2 handfull fresh well chopped coriander, two cloves of chopped garlic, one yellow onion cut into small pieces, 1 little red dried chili, one egg, a tablespoon of lime juice, three tablespoons of rice flour, salt and pepper. All mixed in a bowl and shaped into little crab cakes using a spoon.

The crab cakes are fried on a grill pan for a few minutes and then baked finished in the oven along with the potato and zucchini gratin.

I served the crab cakes with a gratin of grated potato and zucchini with two whipped eggs poured over, also added herbal salt and pepper then baked in the oven at 200 degrees for duration time of 30 min.

Now it’s time for me to try to go to sleep in this warm Barcelona weather.
Goodnight!
