Keep it green

Today is my last day at work before I start my mini summer holiday. My holiday consists of a small trip to Copenhagen followed by summer, sun and relaxation trip with J. to Tossa del mar 🙂
I just want to say good morning and I want to show you what J and I cooked this Sunday..
We cooked a green colored three course dinner at home.
We had cucumber prawn rolls as a starter, gluten free fish cakes with pea purée as a main dish and for dessert we had tons of good dark 80% chocolate 🙂
Pea purée:
300 grams of shelled peas
2 cloves of garlic
1 cm ginger
1 tablespoon oil
Blend until getting a really fine purée
Season with salt and pepper
Cucumber rolls:
Cut half a cucumber into thin slices and place them on a cutting board.
Fry the prawns in a little oil and sprinkle sesame on top.
Mix the prawns in natural cream cheese, with a little chopped red onion and coriander then season with herbal salt and pepper.
Add 2 teaspoons of the shrimp-cheese mixture on each cucumber slice and roll them together. Close with a toothpick.
Fish cakes:
Make the minced fish-meat by blending or mashing 2 white fish fillets and 150 grams of shrimp.
Mix the minced fish-meat with:
1 tassel coriander finely chopped
1 egg
1 red onion chopped
1 clove garlic chopped
1 small red chilli chopped (with seeds)
2 tablespoon corn flour
Create the meatballs with two tabelspoons, then turn them in corn flour mixed with sesame and fry them in a non stick fry pan.
Serve with wild rice, salad or new small potatoes with peel.
