DIY. Almond Milk
The morning before we took off to Australia I had the best morning coffee I´ve ever tasted and my musli was also extremely tasty (more than normal), this was because both were spiced up with delicious home made almond milk …
Two sweet girls in my office told me this: Don’t buy your almond Milk, it´s no good, Do it your self it´s easy and way better.
… and so it is 😉
Ingredients
for four big cups
- 1,5 cup raw almonds
- 4 cups filtered water
- 1 tsp vanilla extract, optional

A few dried pitted dates, optional
This is how you do the milk
- Place 1,5 cup of raw almonds in a bowl or mason jar and cover with water. Soak for 8 hours in the refrigerator. Drain the water off and start fresh for making the almond milk itself.
- Combine soaked almonds, the dates and 4 cups of filtered water in your blender. Blend for until the nuts are completely broken down (1-2 minutes).
- Strain the nut milk through a clean kitchen towel or through a thin hole sieve or through a nut milk bag if you have one. Squeeze out the excess moisture from the ground up almonds.
- Stir in the vanilla extract, if desired.
- Keep in a tightly covered container. Stays fresh for about 3 days.
Do not throw away the remains of the nuts etc. that you can use in a paleo bread, in a cake or as the office girls said dry it in your oven on low heat for min. 30 minutes and use it in a delicious homemade müsli.
