Veggie balls
2 grated sweet potatoes
150 grams of cauliflower
150 grams of broccoli (wash, pick and cook broccoli and cauliflower)
1 small red onion
1-2 cloves of garlic
2 cm fresh peeled ginger
Add fresh parsley as you like
1 small red chilli with seeds
1 egg
2-3 tablespoons of corn flour
salt, pepper and a little turmeric
Mix it all using your hands and let the “stuffing” rest in the fridge for 30 minutes.
Then shape and fry the veggie-balls on a non stick grilled pan as you do with ordinary meatballs.
I served the veggie-balls with a green bean salad.
These Veggie-balls will make your friends greens with envy 😉
