Popeye -Spinach soup with a boild egg
Some days ago we had this filling, warming and rich spinach soup. The soup was delicious and I tell you this soup gives energy …kind of the same energy as Popeye get´s when he eats spinach !
Recipe:
4 servings
2 shallots, finely chopped
1 clove of garlic
10-20 g of butter (you can also use oil)
500 g of frozen spinach
150 g of greek yoghurt
100 ml of white wine
1000 ml veggie or chicken broth
1 red chili (tiny)
pepper
salt
2 eggs
In a large pot, fry the shallots, garlic, spinach and chili in butter till translucent. Add the white wine and fry for 5 min, until the alcohol is gone, then add the broth and bring to a boil. Let it simmer for 10-15 min.
Put the spinach and some of the liquid in your blender and blend till smooth. Return the soup to the pot, put in the greek yoghurt and season with salt and pepper and keep warm.
Put the eggs in boiling water and let boil for 8 minutes, then remove from the heat and run under very cold water to stop the cooking process. Peel them carefully and cut them in two.
Pour the hot soup in a plate and put half a egg in each plate, season with pepper, garnish with chopped chives or fresh spinach and serve immediately.
