The world’s easiest Gluten-Free Salmon Pasta

Salmon-pasta.jpgI was told about this easy pasta dish from a very sweet colleague and then I just adjusted it for my personal and gluten-free needs.

Ingredients 4 pers:

400g of gluten-free pasta
150g of smoked salmon, cut into thin strips
1 tablespoon of olive oil
2 garlic cloves, crushed
1 onion, chopped
0,5 of a zucchini, diced
200 ml of cooking-cream (or milk)
200g of Blue cheese (sweet or strong after taste)
Salt and pepper and a small bunch of fresh broadleaf parsley to garnish

Method:

Cook the gluten-free (or normal pasta) pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Drain and return to saucepan.

Meanwhile, heat oil in a large frying pan over medium heat. Add garlic, onion and zucchini. Cook, stirring, for 1-2 minute. Add salmon and fry lightly for 1 minute. Then add the cream and the blue cheese. Let it boil until the cheese is melted.

Taste with salt and pepper and turn sauce and pasta together.
Garnish with fresh broadleaf parsley and serve hot.

A super easy and delicious dish and if you want a more low-fat, you can use milk instead of cream.
