Rice Pudding Pancakes (gluten-free)
This weekend we had Rice pudding just like we do in denmark during Christmas (or I had Rice pudding, because J dosen´t like this particular christmas dish, so he had something else, – something more fitted for a man ;)).
Yesterday I made delicious little pancakes from the remains from the Rice Pudding, (about 1/4 of a portion of rice pudding).
Recipe:
1/4 of a portion of Rice Pudding
2 egg yolks
2 beaten egg whites
1 tablespoons sugar
Grains from 1/2 vanilla pod – or if you don´t have a vanilla pod you can use 1 teaspoon of vanilla sugar instead
1 tablespoon of cinnamon
Mix all the ingredients above (until it´s like a dough) and then turn the beaten egg whites carefully in the rice pancake dough.
Fry the little pancakes on a pan with butter and serve with greek yoghurt and winter berries, marmelade or the fruit of the season and topped with chopped nuts.
