Gluten-free Vanilla wreaths (Vanilliekranse)

Christmas cookiesThe photo above is me looking awesome in my grandma’s old apron and now when we are speaking about nostalgia I also used my grandma’s old Corletti biscuit box for my baked Christmas biscuits. 🙂

Here’s the recipe of the tasty and crunchy vanilla wreaths.

Ingredients:

250 g of sugar
1 big-2 small vanilla pods (to use vanilla-sugar is strictly prohibited)!
500 g of gluten-free flour
2 tsp. of baking powder
250 g of butter
1 egg
100 g of finely chopped almonds (or almond flour)

Recipe:

Carefully scrape the seeds from the vanilla pods and stir the grains with 2 tbsp. of sugar.

Add a little more sugar and stir the grains evenly. Keep going until you’ve poured all the sugar in (by doing it this way you can prevent the grains clumping together in the dough).

Add the baking powder in the gluten-free flour and crumble the flour and the cold butter together with your hands, so it get’s the consistency of grated parmesan.

Mix and knead all the ingredients together until it has the shape as a good biscuit dough.

Let the dough rest in your fridge for a minimum of one hour (the longer the better). Make sure the dough is covered in the fridge. I remember when mum and dad were making the dough, they use to leave it in the fridge overnight.

Form and shape small vanilla wreaths and place them on your baking tray.

Bake the vanilla wreaths at 190º until they are light brown (usually about 10 min).

P.S. I could not bear making all the dough into wreaths, so I rolled half of the dough with a rolling pin and I used a star-shaped cutter to form the stars.
