No to Food Waste!!! – Chinese Chicken Salad

In my home we say no to Food Waste (if it’s possible of course)  😉

In the news these days we often see how many poor people are suffering from hunger. At the same time we see how the supermarkets are throwing away good food, just because there is a pressed corner of the cardboard box that the bread is packed in, etc, etc.

I get so sad and affected when I see how the poor people suffer, while people in countries around the world with welfare just keeps getting poorer and poorer. I often wish that I could send my dinner with UPS Transport to them who need it more than I do.
We must help where we can, therefore me and J always give a little money to the poor and homeless people, but I don’t know if it helps, but I hope a little is better than nothing.

I think it’s important to take care of the of those in need and the environment and to avoid unnecessary waste of all kinds.

Some days ago we cooked a Chinese chicken salad with creamy soy dressing with the leftover chicken we had from the other night.

Ingredients:

1/2 cup(s) low-fat mayonnaise

2 tbs soy sauce

2-3 tsp fresh ginger, finely grated

500 cooked chicken (boiled or fried)

100g snow peas, cut in half on diagonal

1/2 medium red capsicum, deseeded, finely chopped

2 medium carrots, grated. I used a potato peeler to grate the carrots.

4 individual green shallots, ends trimmed, thinly sliced

Fresh spinach leaves.

Recipe:

Combine mayonnaise, soy sauce and ginger in a large bowl. Whisk until blended. Season to taste with salt and pepper and set aside.

In a seperate bowl, combine chicken, snow peas, capsicum, carrots and shallots. Toss to combine, then add the dressing and toss to coat.

I served it with more chicken, and on top of fresh spinach leaves, (you can easily use other kinds of salads).

It took me 15 min. to make this salad & is was good, tasty and gluten free and so easy to make. Next time i will try and use sesame / Thain in the dressing to make it a little more Asian.
